Cookie:  Rudolph's Red Velvet Surprise Cookes
Description:  Delicious red velvet cookies with a special treat inside! Won first place in last years family cookie throw down!!!

Ingredients:  For the cookies:
1 box red velvet cake mix (Duncan Hines)
2 T all-purpose flour
2 large eggs
1/2 cup canola oil
1 tsp vanilla extract

For the cheesecake filling:
4 ounces cream cheese, room temp
2 cups powdered sugar
1 tsp vanilla extract

For the drizzle:
1 1/2 cup white chocolate chips, melted
Directions:  In large bowl, combine cake mix and flour. Whisk until clumps disappear. Add eggs, oil, and vanilla to dry mix and using mixer, mix until smooth. Wrap dough in plastic wrap. The dough will be oily. Refrigerate for at least two hours.

For filling: Using mixer, combine cream cheese, powdered sugar and vanilla until smooth. Using a tsp, scoop out filling and place on a plate. Continue scooping until there are 10-12 balls. Freeze for at least two hours. Can make more, will just be smaller cookies.

Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Take approximately 1/4 cup red velvet cookie dough and flatten. Wrap the frozen cheesecake filling balls with red velvet dough, gently rolling into a ball and placing on cookie sheet. Bake 3-4 at a time as they will spread. Bake 11-13 minutes, or until cookies crackle. Let cool minutes on baking sheet, remove and place on wire rack.
Melt white chocolate chips in microwave or double broiler on stove. Drizzle over cooled cookies.
